Bubu Arare are a traditional ingredient from Kyoto. They are tiny rice pops/crackers made from just glutinous rice. Traditionally, they are sprinkled over "ochazuke" - a dish whereby hot tea and/or dashi stock is poured over rice and topped with e.g. umeboshi plums. The Bubu Arare add a nice nutty flavor and a unique crunch.

Alternatively, bubu arare can be used as a topping on your rice or salad, to spice up your soup, or as an alternative for 'panko' to fry your fish, chicken or tofu! The salted Bubu Arare contain just a bit of salt, making them ready for use to not only add texture, but a delicious nutty flavor brought out by the salt. They are delicious on their own too!

These Bubu Arare are made by traditional maker Narumiya (1923) in Kyoto. Enjoy the crispiness and the variety of this authentic snack.

  • Narumiya is an arare rice cracker specialist from Kyoto, who has been operating since 1923.

They use the best local ingredients and traditional methods to ensure the best quality of their products. By soaking rice in water, then steaming, pounding and chilling it, it will be cut and dried before finally being backed. Different type of arare require different methods and time. The whole process can take up to three weeks.

Narumiya still uses traditional square "seiro" steamers, which are more labor intensive than modern machinery, but the best way to create a fluffy rice paste for the best crisp crackers. Some of their products are then even dried traditionally in vintage wooden containers, and have to be turned by hand. As time, humidity and temperature are key to the quality of the cracker, a skilled, experienced artisan is present at every step, carefully timing each process with a stopwatch.

Narumiya values the use of domestic ingredients and authentic manufacturing process and is dedicated to stick with these to create the best tasting arare to customers in- and outside of Japan!
