Shiitake mushrooms are a great way to add 'umami' to your dishes. With a nice meaty texture and a deep flavor, you can use them to create a soup stock, or use them in a variety of recipes. 
Shiitake are said to support immunity, reduce cholesterol, reduce inflammation, and contain a lot of fiber and other important nutrients. 


  • Grown in Shizuoka prefecture by a small farmer. Shizuoka is Japan's largest production area for Shiitake.
  • Sundried without using UV or drier
  • Close cap to keep dirt and bacteria outside the Shiitake

  • These natural shiitake come straight from the farmer in Shizuoka prefecture. 

    Instructions by the farmer: 

    1. Wash shiitake mushrooms under running water to lightly remove debris, and place them in a container. We recommend using an airtight Tupperware container or an airtight bag with a zipper

    2. The most important point! Always use cold water!

    Once the shiitake mushrooms are placed in the container, fill it to the brim with water, just enough to cover the mushrooms. Do not use lukewarm water, but cold water of about 5°C (41°F). Cold water absorbs the shiitake mushrooms well and releases a lot of guanylic acid, a unique umami component of shiitake mushrooms. The guanylic acid is at its maximum around 5 hours after you start to rehydrate them.

    3. Depending on the type of shiitake mushrooms, place them in the refrigerator for about 6 to 12 hours to slowly return them to their original state. To extract the full flavor, it is important to allow time. If you use hot water or a microwave to rehydrate the shiitake mushrooms in a short time, the texture will not be as good as it should be, and the original flavor will be lost.
