Using a unique, high quality Kanagawa grown soy bean - also called "unicorn soy bean" because of it rarity, along with pure, mineral-rich 'Arashio' sea salt from Izu, this original brand combines the best ingredients for a Deep, yet slightly sweet and smooth flavor that sets IICHI aside from other brands.   • Miso is a very healthy, traditional Japanese ingredient, made from fermented soy beans. Create authentic Japanese recipes, or add a little bit to your soup or dressing to give a new twist to Western recipes by introducing pure "umami" flavor. 

    IICHI represents top-class, traditionally hand made miso, prepared with carefully selected ingredients, and family recipes they have used for 7 generations! They use water from the Hakone volcano system in Kanagawa (near Mount Fuji).

    Together with his son, the now 7th generation of the business, Mr. Kato exclaimed to strive to produce the best possible quality, old-style miso, according to traditional standards and crafting methods, to respect their forerunners and authentic food culture.

    Whereas many miso businesses have switched to machinery in order to produce faster and cheaper, Mr. Kato strongly believes that the miso bacteria released during its production, have soaked into the vats over time and produce an even more intense, pure flavor.
