Miso is a traditional Japanese ingredient, made from fermented soy beans. Over the years, it has internationally grown in popularity, due to its diversity, ease of use and enormous health benefits. IICHI represents top-class miso, prepared with carefully selected ingredients, underground water from the Hakone volcano system, and a precise aging process, carried out in wooden vats that they have used for over 80 years. The miso is largely produced by hand and the craftsmen stay true to their family recipe that has been used for 7 generations!
IICHI uses water from the Hakone volcano system in Kanagawa (near Mount Fuji). This "Hakone Road" blend is carefully made according to generations-old recipes and is preserved and browned in wooden vats that have been used for 80 years! Small grains of soy beans are left in the final paste, which gives a deep, complex flavor. The miso has been matured for a long time, which gives a strong flavor and smell - it can be enjoyed by people who like a stronger, saltier umami flavor.
Together with his son, the now 7th generation of the business, Mr. Kato exclaimed to strive to produce the best possible quality, old-style miso, according to traditional standards and crafting methods, to respect their forerunners and authentic food culture.
Whereas many miso businesses have switched to machinery in order to produce faster and cheaper, Mr. Kato strongly believes that the miso bacteria released during its production, have soaked into the vats over time and produce an even more intense, pure flavor.
