This Yamadashi kombu is perfect to create a delicious stock as base of a soup or various Japanese traditional dishes - including hot pot and simmered dishes. The strips are cut in 22cm pieces. We recommend +/- 30g per 8 cups of water for a delicious stock. After boiling, you can take out the kombu pieces and season them separately with e.g. mirin and soy sauce to enjoy on their own. 
For healthy, flavorful Kelp water, put kombu in a bottle in the fridge for 3-4 hours!

    Japan's Best Kombu Kelp Producer

    The company Okui Kaiseido has been established in 1871 and is now run by the fourth generation of the Okui family. The company is located in Tsuruga, which at the time of the establishment was one of the main ports used to trade Kombu kelp from Hokkaido to Osaka and Kyoto. Nowadays, there are very few makers that understand and master this traditional art. Mr. Okui is one of these makers and therefore the Kombu from Okui Kaiseido is well-known and often chosen by famous Japanese chefs.
