YAMASHIN White Ponzu Sauce
Ponzu is a unique, important ingredient in every Japanese kitchen. Being said to originate from the Dutch word “pons” (punch – fruit juice), it is a dark, citrus-based, water thin sauce that gets its typical flavor from citrus like lemon, lime or yuzu combined with vinegar. Taking over the Japanese kitchen during the Edo period, ponzu is a mild, simple ingredient that brings out the flavors of whatever meal you create, and gives it a refreshing touch because of the citrus. As it does not contain any oil, it is a perfect dipping sauce or topping for health-conscious foodies, and during the warm summer months when it helps giving a lighter, subtler flavor to your meals.
Some ponzu are made with soy-sauce to give them an extra unique flavor.
The YAMASHIN Soy Sauce Brewery was established in 1802 and since its first days focussed on producing white soy sauce. It is located in Aichi prefecture, which is home to many long established soy sauce producers.
YAMASHIN still uses traditional wooden barrels for brewing some of their white soy sauces to achieve very intense flavors.
