Fruits are pickled by hand, processed one by one and either juiced, sliced, or turned into pastes and condiments. By carefully inspecting and handling them by hand, YUZUYA ensures a delightful, natural citrus flavor, without overpowering bitterness and artificial flavorings. They take excellent care on quality control and food safety and are Halal certified.
YUZUYA, based in Hagi, Yamaguchi prefecture, was established in 1978 as a one-man business and grew to be a corporation from 1981 onwards. Their mission is “From Hagi’s skies, from Hagi’s soils” to indicate they work with all-natural, local ingredients and farming techniques, without adding chemical seasonings and food additives.
The raw materials are Japanese citrus fruits, like yuzu, sudachi and daidai, that are grown locally, including at their own “YUZUYA FARM” with over 5,000 yuzu trees. YUZUYA is dedicated to putting genuine flavor and the health of both employees and customers first.
Taking tremendous amounts of time and effort, YUZUYA keeps production volumes low to offer the best quality possible; All thanks to the manual labor by their small, but dedicated and knowledgeable team.
YUZUYA furthermore offer workshops at their factory for customers to experience their unique production process.
Growing deep into the mountains and with very sharp thorns, these fruits are not easy to harvest, but yuzu is a very popular citrus in the Japanese kitchen. The blooming trees make for a breathtaking view, and a wide variety of yuzu products, from vinegar, fresh juice, marmalade and sugared candy, is popular with customers all over the world.
Harvested from mid-September to December. “A fruit of happiness” that grows two or three generations in a row from one single tree. calls for prosperity of descendants because it bears fruit for two or three generations in a row on one tree. A very unique flavor combination with Japanese sashimi!
Sudachi is a sour type of Japanese citrus, often not eaten on its own but in form of a vinegar, sweets, or soft drinks. In dishes, it is also very popular with fish or noodles. It is either used for its juice or the skin.

Hand squeezing method:
The juice is carefully squeezed little by little to avoid unpleasant tastes so that the fruit juice is mellow with the original taste and aroma of citrus fruits.

With their motto "From Hagi’s skies, from Hagi’s soils", they promise a natural, authentic Japanese, locally farmed citrus flavor. The Yuzu products are farmed in-house; the other citruses with contracted, local farmers.
